Banana Chocolate Chip Muffins
Mmmmhhhh! Who doesn’t like bananas mixed with chocolate? These Banana Chocolate Chip Muffins are absolutely delicious and a tad bit addicting. There is a low amount of sugar in these, high amount of bananas, and a good amount of chocolate chips to help perfect this recipe. This low-fat recipe is very moist and melts right in your mouth with every bite. This is great recipe for a lazy weekend morning or to bring to a football Sunday party. – Kara, The Accidental Chef
Serves 12
Ingredients:
- 6 medium bananas
- 1 1/4 cups whole wheat flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp I can’t believe it’s not butter light, melted and cooled
- 1/3 cup brown sugar
- 2 large egg whites
- 1 tsp of almond extract
- 1 1/2 cups mini chocolate chips
Directions:
Preheat oven to 325 degrees.
Place paper muffin liners in your muffin tin.
Mash bananas in a large bowl.
In a small separate bowl, add the egg whites and whisk until frothy.
Then add these to the bananas with the almond extract.
In a separate medium bowl, add the melted butter to the sugar and mix thoroughly before adding this to the banana mixture. Once added, stir everything together.
Then add the flour, baking powder, and salt into this mixture. Stir so everything is combined.
Then add the chocolate chips gently into this mixture.
Pour this mixture into each muffin tin.
Place into the oven for 40 minutes.
Remove and let cool for 4-5 minutes before digging into these delicious muffins.
