Butternut Squash Pork Tacos
These slow cooked butternut squash pork tacos are perfect for meal prepping or for a dinner party. These butternut squash tacos require very little prep and hands on cooking. The spices really add a wonderful flavor to the red sauce which infuses a savory flavor into both the pork and butternut squash. This slow cooked pork butternut squash tacos recipe is very high in protein and low in carbs. I love to pair this with some spinach and corn tortillas but it would also be great as a rice bowl too! – Kara

Ingredients:
- Pork Shoulder
- 1 Butternut squash, cubed
- 1 tbsp of Smoked Paprika
- 1 tbsp of cumin
- 1 tbsp of garlic powder
- 4.5 cup of Red Enchilada Sauce
Optional:
- Spinach
- Corn tortillas
Directions:
Start by browning the pork shoulder in a large pan.
Brown each side over high heat and then immediately remove it from heat and place it into the slow cooker.
Add in the cubed butternut squash into the slow cooker.
Then top it with 1 tbsp of smoked paprika, 1 tbsp of cumin, and 1 tbsp of garlic powder.
Then add the 4.5 cups of red enchilada sauce.
Place the lid on and cook for 8 hours on low or 4 hours on high.
Once the time is up, remove the pork from the slow cooker and place on a cutting board.
Shred the meat and set it aside.
To serve, place some pork and butternut squash on top of the tortillas.
Top with spinach and a little bit of the sauce from the slow cooker and serve.
