Slow Cooked Cajun Chicken Thighs with Artichokes
This delicious and easy slow cooked Cajun chicken thighs recipe is packed full of flavors and is perfect for a busy weeknight dinner. – Kara
Serves 4
Ingredients:
- 1/4 cup of Non-fat Greek Yogurt
- 3 tablespoons of chopped scallions
- 1 tablespoon of Cajun Seasoning
- 4 oz of lemon juice
- 1 cup of marinated artichokes w/ sauce ( I like to use Trader Joe’s Marinated Artichokes)
- 1/2 teaspoon dried thyme
- 1/8 teaspoon cayenne pepper
- 4 pounds of skinless chicken thighs
- Olive Oil Spray
Directions:
Spray the bottom of the Crock Pot with the olive oil spray.
In a small bowl, stir together the non-fat Greek yogurt, shallots or scallions, thyme, and Cajun seasoning.
Coat the chicken with this mixture on both sides and then place the chicken into the crock pot.
Add the lemon juice and the artichokes.
Cover and cook on low for 4 hours.
