Serves 6 (Serving size: 1/2 of a lamb shank with vegetables)
Ingredients:
- 3 lamb shanks
- 1/2 tsp of garlic salt
- 2 carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 28 oz can of crushed tomatoes
- 3 sprigs of rosemary
- 1/2 tsp of orange zest
Directions:
Brown the lamb shanks on medium high heat in a pan.
Place the peeled and chopped carrots and parsnip into the crock pot.
Then place the browned lamb shanks on top of the vegetables in the crock pot.
Then pour the crushed tomatoes over the lamb shanks.
Add the orange zest over the crushed tomatoes.
Place 3 sprigs of rosemary into the pot.
Cover and cook on high for 4 hours or low on 8 hours.
Trim the fat off the lamb before serving to lower the fat intake.
