The Feel Good Tomato Soup
My feel good tomato soup is perfect for when you have a cold or fever or are even feeling a little blue. The richness of the cherry tomatoes combined with the healthy components of leeks and turmeric will really kick your body back into tip-top shape. This gluten-free, dairy free (vegan), and paleo friendly soup has 32% vitamin a, 40% vitamin c, and 21% iron.
This healthy filling soup requires very little prep time and is an easy recipe to make even if you are not feeling well.

Serves 5
Ingredients:
- 3 cups of cherry tomatoes
- 1 tablespoons of Olive Oil
- 1 tsp of black pepper
- 5-6 garlic cloves, minced
- 1/4 tsp of turmeric
- 1 large leek or 2 small leeks
- 1 1/2 cups of low sodium vegetable broth
- 2 14.5 oz cans of diced tomatoes
- 1/2 cup of chopped fresh basil
- Avocado oil
Directions:
Preheat the oven to 400 degrees.
Spray baking sheet with olive oil spray. Place the cherry tomatoes on the sheet and drizzle them with avocado oil. Roast the tomatoes for around 20 mins or until the tomato skins look wrinkly.
Turn the stove to a medium heat and place a large pot on top. Once hot add the chopped leeks and minced garlic and top it with 1 tablespoon of the olive oil.
Sauté for 4-6 minutes or until the leeks are softer.
Add the roasted tomatoes, broth, canned tomatoes, turmeric powder, black pepper, and the basil.
Bring the soup to a boil, then turn down to a low simmer. Partially cover the pot and allow it to simmer for about 20 minutes, or until the soup is nice and hot and the liquid has reduced a bit.
With an immersion hand blender (or food processor or blender), blend up the soup to your desired consistency and serve.
