Gluten Free Apple Crumble Muffins
These gluten free apple crumble muffins are incredibly easy to make and taste so delicious and sweet. This gluten free apple crumble muffin recipe has no added sugar in it. I truly love how I can use cinnamon with apples in my baking recipes as a substitute for sugar. I used cosmic crisp apples for this recipe, but you can use your favorite apples of choice. Please note that if you skip the coconut flour the muffins will not come out as soft and will have more of a grainy texture to them. I would keep these refrigerated after the first day, so they last longer. – Kara

Ingredients:
- 2 1/4 cup of almond flour
- 2 tsp of coconut flour
- 1/2 tsp of baking soda
- 1/4 tsp of sea salt
- 1/2 tsp of cinnamon
- 1/4 tsp of nutmeg
- 2 large eggs
- 1/3 cup of non-dairy plain yogurt
- 1/4 cup of agave
- 1 tbsp of lemon juice
- 2 tsp of vanilla extract
- 3/4 of cosmic crisp apple, cubed
For Crumble:
- 1 tbsp of almond flour
- 1/4 of a cosmic crisp apple, cubed
- 1/4 tsp of cinnamon
- 1/4 tsp of lemon juice
- 1 tsp of agave
- 1 tsp of vanilla extract
Directions:
Preheat the oven to 315 degrees.
Line the muffin tin with paper liners.
In a large bowl, combine the 2 1/4 cup of almond flour, 2 tsp of coconut flour, 1/2 tsp of baking soda, 1/4 tsp of sea salt, 1/2 tsp of cinnamon, and the 1/4 tsp of nutmeg together.
Then add the two eggs into the dry mix and mix well.
Then add 1/3 cup of non-dairy plain yogurt into the mix and mix well.
Then add the 1/4 cup of agave, 1 tbsp of lemon juice and the 2 tsp of vanilla extract into the mix and mix well.
Then gently add the cubed apple pieces into the mix.
Using a spoon or ice cream scoop, place the batter into the muffin liners.
In a separate smaller bowl, combine the 1 tbsp of almond flour, the remaining cubed apple pieces, 1/4 tsp of cinnamon, 1/4 tsp of lemon juice, 1 tsp of agave, and the 1 tsp of vanilla extract together. Make sure that the apple pieces are evenly coated.
Then top the muffin batter with a little bit of the apple mixture from the small bowl.
Place the muffin tin inside of the oven for 25-30 mins or until a toothpick inserted in the muffins comes out clean.
