Gluten Free Cinnamon Pancakes
These gluten free cinnamon pancakes recipe can easily be doubled or made into a simple one serving meal for yourself. This is one of my favorite breakfast meals to meal prep out for my work week ahead. Just heat it up in the mornings and serve with agave or honey and berries. You can also just use any different kinds of oats (rolled, or different instant pack flavors for a fun twist). – The Accidental Chef
Serves 4
Ingredients:
- 4 Bananas
- 4 eggs
- 4 instant maple oatmeal packets (or 4 cups of rolled oats)
- 1 tsp of ground cinnamon
Directions:
Blend together the oats and the cinnamon first (*this has to be the first step, especially if you are doubling the recipe).
Then add the eggs, and then the bananas, two at time a time, until blended thoroughly.
In a large pan over low heat, melt a sliver of vegan butter to help the pancakes not stick to the pan.
Then in batches and with a large spoon, pour a spoonful of batter into 4 circles on the pan.
Wait until you see bubbles before flipping the pancakes.
Repeat until you have no more batter.
Serve with agave or honey and berries.
