Gluten Free Greek Pasta Salad
This healthy and delicious Gluten Free Greek Pasta salad recipe is super easy to throw together and is full of fresh summer flavors! Serves 8
Ingredients:
- 1/4 cup of Reduced Fat Feta Cheese Crumbles
- 1/2 cup of Artichoke quarters
- 15 oz of Gluten Free Banza Chickpea Rotini Pasta
- 3 tbsp of Red Wine Vinegar
- 2 tbsp of Lemon Juice
- 0.3 cup of Olive Oil
- 1/2 tsp of Garlic Powder
- 1 1/2 tsp of Oregano
- 1/2 tsp of salt
- 0.5 cups of Kalamata Olives
- 2 cups of cherry tomatoes, halved
- 3 cups of diced cucumbers
Directions:
Bring a large pot of salted water to a rolling boil. Add Banza Rotini and stir immediately. Cook for 7-9 mins – expect some foam.
Strain and rinse under cold water.
Place in a large bowl and set aside.
In a different bowl, combine the 3 tbsp. of red vinegar, 2 tbsp. of lemon juice, 1/3 cup of olive oil, 1/2 tsp of garlic powder, 1 tsp of oregano, and 1/4 tsp of black pepper.
Stir the cucumbers, halved cherry tomatoes, olives, and artichoke hearts into the pasta.
Toss well. Add the 1/2 cup of low-fat feta cheese just before ready to serve and enjoy!
