Mini Gluten Free Peanut Butter Cookies
This healthy delicious gluten free peanut butter cookie recipe is super simple and fast to throw together. Plus, it’s low in calories, carbs, and fat. Now for the perfect results, I recommend using Justin’s Classic Peanut Butter — I did try other brands but the with other brands, I got dry cookies. However, when I used Justin’s, I got a very moist and deliciously flavored cookie. Ingredients:
- 1/4 cup of dark brown sugar
- 1 tsp of Madagascar Pure Vanilla Extract
- 1/2 tsp of Imitation Maple Flavor Extract
- 1/4 cup + 2 tbsp of Justin’s Classic Peanut Butter
- 1/3 cup of egg whites
- 2 tbsp of Coconut flour
Directions:
Preheat the oven to 350 degrees.
In large bowl, mix together the 1/4 cup + 2 tbsp. of Justin’s Classic Peanut Butter,
1/3 cup of egg whites, 1/2 tsp of Maple extract, 1 tsp of Vanilla extract,
1/4 cup of brown sugar and 2 tbsp. of Coconut flour.
Mix until smooth.
Place a parchment sheet on a baking sheet and spray with nonstick oil.
With your hands covered with a pinch of flour, roll the peanut butter mixture into small balls, and place them on the baking sheet 2 inches apart from each other.
Then press a wet fork into the cookies twice as shown below.
Sprinkle with sea salt and bake for 10 mins.
