Gluten Free Sausage Pesto Penne Pasta with Artichokes
This healthy gluten free pesto penne pasta recipe is so deliciously refreshing and filling. It’s another easy and quick gluten free meal for a busy night or just an easy dinner night. A wonderful balance of flavors, with the basil lemon as the power notes in this pesto combined with the savory sweetness of the sausage and with the tartness of the artichokes. Serves 8
Ingredients:
- 12 oz of Mild or Country Sausage
- Garlic Salt
- Black Pepper
- 1 Can of Artichoke Hearts
- 1 box of Banza Penne Pasta
For Pesto:
- 2 cups of Basil
- 1/3 cup of grated dairy free Parmesan
- 1 cup of Pine Nuts
- 1/4 cup of Olive Oil
- 1 large clove of garlic
- 3 tsp of lemon juice
Directions:
Cook the pasta according to the directions (boiled in salted water, until al dente). Rinse with cold water and set aside.
In a food processor, pulse the garlic clove and pine nuts together. Then add the lemon juice, parmesan, olive oil, and basil into the food processor until it’s blended.
In a large pan over medium heat, sauté the artichoke hearts over medium heat until the bottoms are a little bit brown. Remove from heat and set aside.
In the same pan, add the sausage, garlic salt, and pepper and cook it until the sausage is all brown.
In a large bowl, add the pasta, the sausage, and the artichokes together. Then gently fold in the sauce making sure that it all gets evenly coated.
Serve immediately and enjoy.
