Crock Pot Hawaiian Smoked Pork Pineapple Bowls
These delicious and easy crock pot Hawaiian “smoked” pork pineapple bowls are so filling. The liquid smoke really balances out the fruity pineapple juice flavors and they both infuse themselves into the pork while cooking in the slow cooker. I love that it requires very little prep time. The most amount of effort in this recipe comes from carving up the pineapple. You can also serve this in taco form too, I just prefer doing this pork pineapple recipe in pineapple bowls as I feel it adds more moisture back into the dish. – The Accidental Chef
Serves 6
Ingredients:
- 2 lbs of Pork shoulder or loin works best
- 1/4 cup of liquid smoke
- 6 oz Pineapple juice
- Whole Pineapple
- 2 cups of uncooked Brown Rice
Optional:
- cilantro
- salsa verde
- green onions
Directions:
Place the pork into the crock pot.
Then using a knife, pierce the pork all over.
Add the pineapple juice and the liquid smoke over the pork and into the pot.
Set your crock pot to cook on low for 10 hrs.
Cook your brown rice in your rice maker beforehand.
Slice a pineapple in half, and then carve out a square in the middle for the rice and pork to fit into.
Slice the pineapple bits that you carved out into bite size slices.
Shred the pork and place it into a bowl with the rice, green onions, cilantro, and pineapple slices.
Then spoon that mixture into the pineapple halves.
Top with your choice of salsa (I prefer salsa verde with this) and serve.
