Mango Avocado Black Bean Salad
This Mango Avocado Black Bean Salad is one of my favorite summer side dishes to make. This recipe requires little prep time. Enjoy this healthy recipe which is packed full of summer flavors with the mango and lime juice. Serves 10
Ingredients:
- 2 cans of 14.5 oz Organic Black Beans (drained and rinsed)
- 1 large tomato, diced
- 1 small tomato, diced
- 2 medium Hass avocados, diced
- 1 tsp of cumin
- 1 tbsp of red wine vinegar
- 1 lime
- 4 oz of sliced red onion
- 1/4 cup of diced cilantro
- 1/4 cup of diced green onions
- 1 cup of sliced mango
Directions:
Dice both of your tomatoes and place them into a bowl.
Dice the red onion and place into the same bowl. Drain and rinse the black beans, then add to the bowl.
Then dice the mango and the avocado. Place into the bowl. Then cut the lime in half and with both halves, squeeze the juice out into the bowl. Toss the ingredients in the bowl gently.
Then add the cumin, the red wine vinegar, green onions, and the cilantro into the mix. Toss gently again to make sure everything has equal amounts of spice and dressing.
Once everything has been added and tossed, this healthy refreshing dish is ready to serve. Enjoy!
