Sautéed Mushroom Pork Chops
These healthy sauteed mushroom pork chops are great for a busy weeknight dinner when you do not want to spend a lot of time in the kitchen. This is one of those great low carb high protein meals that I love serving over cauliflower rice. – Kara
Serves 4
Ingredients:
- 1 tablespoon of Earth Balance Vegan Butter
- 4 thin cut pork chops with bone, trim all fat around the edges
- fresh ground pepper & black lemon pepper
- 1/4 cup chopped shallots
- 1 1/2 cup fat-free chicken broth
- 12 oz sliced Baby Bella mushrooms
- 1 tbsp Dijon mustard
- 2 tbsp chopped, fresh parsley
- 1/4 cup of white wine
Directions:
In a large sauté pan heat the butter over low heat.
Season pork chops with black lemon pepper and let them soak in the white wine and 1/2 cup of chicken broth.
Add shallots to the pan and cook, stirring until they become soft.
Add the broth, mustard, 1 tbsp parsley, mushrooms, a dash of pepper (1/4 teaspoon) and cook for 3 minutes.
Then add the pork chops and let them brown on each side, roughly 7 minutes per side.
Once browned on both sides remove from heat and serve with fresh parsley on top!
