Gluten Free Prosciutto Mint Pea Pesto Pizza
This delicious easy to make gluten free pizza recipe is packed full of savory flavors. I love regular basil pesto but wanted to try something different for this gluten free pizza recipe. I love how the mint pea pesto balances out the savory richness of the prosciutto and goat cheese. This gluten free pizza recipe is so refreshing and light but also very filling. I prefer to use Gluten Free Plain Pizza Crust but you can use whatever brand you prefer. – Kara
Serves 8 (with each person getting two slices)
Ingredients:
- 2 Gluten Free Banza Small Pizza Crusts
- 4 Garlic Cloves, smashed
- 2.5 cups of Peas, cooked
- 1/4 cup of Basil
- 1/4 cup of Walnuts
- 1/2 cup of Vegan Parmesan Cheese
- 1 tbsp of lemon juice
- 1/4 cup of Olive Oil
- 5 Mint Leaves
- 4 oz of Garlic and Herb Goat Cheese, cut into bite size pieces
- 6 slices of Prosciutto, sliced into bite size pieces
- 2 tbsp of chopped Sundried Tomatoes
Directions:
Preheat the oven to 400 degrees.
First start by making the pesto. In your food processor, blend together the cooked peas, smashed garlic cloves, vegan parmesan, walnuts, basil, lemon juice and olive oil. Then add the mint leaves and blend again until the mixture is smooth.
Then take your gluten free pizza crusts out of the freezer and spread the mint pea pesto sauce on the crusts (note you will have extra pesto sauce, that is not needed for this recipe).
Then add your sliced prosciutto, then the goat cheese, and then the chopped sundried tomatoes.
Place both of the small pizzas into the oven for 12 mins.
Serve and enjoy.
