Pumpkin Spice Muffins
So I made these Pumpkin Spice Muffins for one of my many Halloween dinner parties last year. They were a big hit and immediately disappeared from the serving plate. These healthy pumpkin spice muffins are delicious and easy to through together at the last minute. These delicious healthy muffins are the perfect way to ease your taste buds into the fall season! Serves 16
Ingredients:
- 2 cups Unbleached All-Purpose Flour – King Arthur Flour
- 2 tsp of Baking Powder
- 3/4 cup of Golden Brown Sugar
- 1 1/4 teaspoon of Cinnamon
- 1 tsp of Ginger
- 1/4 tsp of salt
- 2 egg whites
- 3/4 cups of canned pumpkin
- 1/2 cup of dairy and soy free Smart Balance butter
- 1/2 cup of reduced fat 1.5% buttermilk
- 1 tsp of Pumpkin Pie Spice
- 2 tbsp of Chocolate Sauce (Ghiradelli)
Directions:
Preheat the oven for 400 degrees. Place 16 paper bake cups into the muffin baking pan.
Mix together the flour, brown sugar, baking powder, cinnamon, ginger, and salt together in one bowl.
In a separate bowl combine the eggs, pumpkin, butter, and buttermilk together.
Then add the wet mixture to the flour mixture.
Stir together until fully mixed.
Spoon the batter into the baking cups.
Bake 20-25 minutes or until a toothpick comes out clean.
Let the muffins cool before add the chocolate on top and serve.
