Quinoa Broccoli Egg Bites

Serves 12
Ingredients:
- 8 large eggs
- 1 cup of quinoa
- 1 tsp of garlic salt
- 1 tsp of turmeric
- 1 tsp of cumin
- 2 cups of chopped broccoli florets
- 4 oz of mozzarella
Directions:
Preheat the oven to 350 degrees.
In a pan, add 1 cup of cleaned quinoa to the pan with 2 cups of water. Add the 1 tsp of turmeric and 1 tsp of cumin to the pan. Bring the pan to boil, cover with the lid once at a bowl and lower the heat to low. Cook until there is no more water left. And set aside.
Spray the muffin pan with olive oil.
Then scoop 1/4 cup of the quinoa into the muffin slots.
In a large bowl, combine the 8 eggs and 1/2 tsp of garlic salt together. Mix together.
In a microwaveable bowl, add the broccoli florets, 1/2 tsp of garlic salt and water to the bowl. Microwave the broccoli florets for 2 mins and then drain the water and add them to the egg bowl.
Then add the 1/4 cup of mozzarella to the bowl.
Then add the egg mixture using a 1/4 cup into the muffin slots.
Repeat this process until you are out of the egg mixture.
Bake for 30 mins at 350 degrees.
Remove and serve or freeze for later.
