Roasted Chicken Thighs with Caramelized Onions
This simple roasted chicken thighs with caramelized onions dish packs a lot sweet and savory flavors. I absolutely love caramelized onions, even though I am not a big fan of onions by themselves. But the process of caramelizing the onions in champagne with the bay leaves, creates this mouthwatering smell and tastes decadently sweet. Roasting the chicken and the onions together helps meld these flavors together to create a simple yet pleasing dish. Serves 4
Ingredients:
- 4 4oz pieces of boneless skinless chicken thighs
- 4 garlic cloves, minced
- 1/4 tsp of black pepper
- 1 Walla Walla Sweet Onion, thinly sliced
- 1 cup of champagne
- 2 bay leaf
- 2 cinnamon stick
- 1 tablespoon raw honey
- 1 tbsp of Olive Oil — Try Sotto Voce Lemon Garlic Olive Oil
Directions:
Preheat oven to 400 degrees.
In a medium size bowl mix the chicken with the minced garlic cloves and black pepper. Cover and place in the fridge.
In a small saucepan, simmer the onion, bay leaves, cinnamon stick, and champagne until half of the liquid dissipates, around 15- 20 minutes.
Place the chicken in a baking pan making sure that none of the chicken is touching the sides or the other pieces of chicken. Pour the liquid and onions into the baking dish on top of the chicken. Take out the bay leaves and cinnamon sticks and discard them. Drizzle the raw honey on top the mixture.
Roast for 20- 25 minutes, or until the chicken is no longer pink and the onions have caramelized.
Wait 5 minutes before serving and enjoy!
