Smokey Chicken Ropa Vieja
Ropa Vieja is Spanish for “old clothes”, traditionally it is a Latin dish consisting of steak with vegetables. I made some changes to the traditional recipe to give it my own taste. My smokey chicken Ropa Vieja is not spicy but still has those key Latin flavor notes. This low carb, gluten free crock pot chicken recipe is very easy to throw together yet has a wonderful taste. Serves 6
Ingredients:
- 4 4 oz skinless boneless chicken breasts
- 2 bay leaves
- 1 medium sweet onion, sliced long (I prefer Walla Walla sweet onions)
- 1 large red bell pepper, seeded and thinly sliced
- 1 large yellow bell pepper, seeded and thinly sliced
- 1 large orange bell pepper, seeded and thinly sliced
- 1 15 oz can of tomato sauce
- 1 tbsp cumin
- 1 tbsp of agave
- 1/2 tsp garlic powder
- 1 tsp of oregano
- 2 tsp Smoked Spanish Style Paprika
- 1/4 cup of liquid smoke
Directions:
In your crock pot place the sliced onion and bell peppers into the pot.
Place the chicken on top of the peppers.
Add the cumin, the garlic powder and the agave on to the chicken.
Then add 1 tsp of Smoked Spanish Style Paprika , 1/4 cup of liquid smoke, and the tomato sauce into the crock pot. Stir ingredients together.
Then add 1 more tsp of the Smoked Spanish Style Paprika and the oregano , stir, and cover the crock pot.
Cook on high for 4 hours.
Then once the 4 hours are up, remove the cover and the bay leaves. Then shred the chicken.
This crock pot chicken goes great with my Cauliflower Cilantro “Rice” recipe!
