My Oh My! What a Sweet Rack of Lamb!
This smokey sweet rack of lamb recipe is tasty to the point that you would think I had tricked you into consuming a ton of calories. This healthy and smokey rack of lamb recipe will also fill your kitchen up with the most heavenly smells while its cooking. I love this healthy lamb recipe because it is perfect for a lazy dinner or when you want to watch the football game as you have little prep time, and little actual having to get up and cook time. With 15 minute intervals this is the perfect game day recipe that will be a crowd pleaser for sure! If you are serving a bigger crowd, just get two racks and double the ingredients and round the time up to 20 minutes instead of 15 minutes. – The Accidental Chef
Serves 4
Ingredients:
- 8 piece rack of lamb – I get mine from Costco, trim off the fat
- 2 tbsp of Smokey Mesquite BBQ Sauce by Stubbs
- 1/2 tsp of garlic powder
- 1 tbsp of Reduced Sodium Worcestershire Sauce
- 1 tsp of Smoked Paprika
- 1 tsp of ground cumin
- 1 tbsp of Organic Blue Agave
- 1 tbsp of Liquid Smoke
Directions:
Preheat the oven to 375 degrees.
Trim off the fat from the lamb.
Massage the garlic powder, 1 tsp of smoked paprika, 1 tsp of cumin into the rack.
Then drizzle 2 tsp of the agave on top of the lamb. Once fully covered, then add 2 tsp of the Worcestershire sauce and 1 tbsp of the liquid smoke on to the rack.
Place the rack as shown in the picture below into the oven for 15 minutes.
Then remove and brush on 2 tbsp of the BBQ sauce and on the back of the lamb.
Place back into the oven for 15 minutes.
Remove and then brush on the 1/2 tsp of the BBQ sauce if dry and place back into the oven for 10 minutes if you like it rare or 15 if you like your meat more well done.
After you take it out of the oven, let the rack rest for about 4-5 minutes before cutting into the lamb.
